Farm to Table: The Farm to Table concept encourages you to know where your produce is from and embraces a sustainable approach to agriculture and dining.
Dry Aged: Dry aged beef is beef that has been hung on a rack to dry for several weeks, to evaporate moisture from the muscle, resulting in a greater beef flavor and taste.
Salt moss aging: Salt moss ageing is the optimum and most consistent method of meat maturation as it doesn’t disturb the tissue make-up of the product and holds and intensifies the flavour profile. The result is meat that is more consistent, tender and flavorsome. One farmer from Ireland, Maurice Kettyle from Kettyle Irish Foods, has even patented his own process to mature meat, using a salt cave, and using locally sourced salt. That’s what we call sustainable!
